Burro Banana Muffins

I used some very ripe burro bananas in this recipe. They were so sweet that little added sweetening was required. This very wholesome recipe is great for breakfast, snacks, or a lunchbox treat. Burro Banana Muffins

Makes 6 large muffins.


  • 2 medium burro bananas (very ripe)
  • 1 egg
  • 2/3 c milk
  • 2 Tbsp honey
  • 1/2 tsp rum extract (or vanilla)
  • 1 c whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 c chopped walnuts


  1. Preheat oven to 325 degrees F and generously butter a 6 muffin-cup baking pan.
  2. In a large bowl, mash the bananas. Whisk in the egg.
  3. Add milk, honey, and rum extract. Whisk until well blended.
  4. In a small bowl, mix together the flour, baking powder, salt and nuts. Add them to the wet ingredients and stir until well incorporated.
  5. Spoon the batter into the prepared muffin cups, filling to rim. Place the pan on a baking sheet and bake for 25-30 minutes, or until lightly browned. Cool in pan at least 15 minutes before serving.
