I used some very ripe burro bananas in this recipe. They were so sweet that little added sweetening was required. This very wholesome recipe is great for breakfast, snacks, or a lunchbox treat.
Makes 6 large muffins.
Ingredients:
- 2 medium burro bananas (very ripe)
- 1 egg
- 2/3 c milk
- 2 Tbsp honey
- 1/2 tsp rum extract (or vanilla)
- 1 c whole wheat flour
- 1 1/2 tsp baking powder
- 1/8 tsp salt
- 1/2 c chopped walnuts
Directions:
- Preheat oven to 325 degrees F and generously butter a 6 muffin-cup baking pan.
- In a large bowl, mash the bananas. Whisk in the egg.
- Add milk, honey, and rum extract. Whisk until well blended.
- In a small bowl, mix together the flour, baking powder, salt and nuts. Add them to the wet ingredients and stir until well incorporated.
- Spoon the batter into the prepared muffin cups, filling to rim. Place the pan on a baking sheet and bake for 25-30 minutes, or until lightly browned. Cool in pan at least 15 minutes before serving.
