Spanish Veggie Dog Casserole

Spanish Veggie Dog Casserole This is such an easy dish to make, and so delicious! It’s a great week night meal and very economical!

Serves 5-6.

Ingredients:

  • 5 vegetarian Cedar Lake Deli-Franks or similar
  • 1 (28 oz) can stewed tomatoes (with their juice)
  • 1 c water
  • 2 c raw brown rice, long grain
  • 1 small onion, finely chopped
  • 1 medium bell pepper, finely chopped
  • 1/4 c barbeque sauce

Directions:

  1. Preheat oven to 325 degrees F.
  2. Cut franks into 1 inch pieces. If stewed tomatoes are very chunky, cut them into bite-sized pieces.
  3. Mix all ingredients together and place in a 2 1/2 quart or larger covered casserole dish.
  4. Bake covered 45 minutes. Remove from oven and stir well. (Careful! Steam is hot!) Add a dash of salt and pepper if needed at this point.
  5. Cover and place back in oven 30 minutes more, or until rice is tender. Serve hot.
