Frozen peas can add a lovely and nutritious dimension to a simple omelet. Try this for a quick supper entree or for a special breakfast treat.
Serves 2.
Ingredients:
- 1/4 c water
- 1 Tbsp olive oil
- 1/4 tsp savory or rosemary
- 1/8 tsp salt
- dash black pepper
- 1 c frozen peas
- 4 large eggs
- 1 Tbsp Parmesan cheese, grated
Directions:
- In a large skillet, heat the water, olive oil, savory, salt and pepper on medium low.
- Add the frozen peas and cook 4 minutes, stirring once or twice.
- In a medium bowl, beat the eggs with the Parmesan cheese, using a fork or whisk until smooth.
- Pour evenly into the skillet. (The skillet will have a bit of liquid in the bottom.)
- Mix the eggs into the liquid remaining in the skillet with a fork, giving it a few light stirs.
- Cover the skillet and cook 3 minutes, or until set on the bottom and nearly cooked on the top.
- Loosen the edges of the omelet and turn half over the other half. (This will allow the omelet to continue cooking in the center.)
- Slide onto a serving plate and serve with country fried potatoes.
