This fava bean recipe makes a healthy and tasty breakfast or snack. Serve it with pita bread or scoop it up with pieces of green pepper or onion.
Serves 2-3.
Ingredients:
- 1 Tbsp olive oil
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 tsp cumin seeds
- 1 medium tomato, chopped or 1/4 c tomato sauce
- 1 Tbsp minced parsley (optional)
- 1 (16 oz) can fine fava beans, plain or seasoned
- 1/2 Tbsp fresh squeezed lemon juice
- salt and pepper to taste
Directions:
- In a small, heavy pot over medium heat, warm the olive oil.
- Add onions and saute 6 minutes.
- Add garlic and cumin seeds and saute another minute.
- Add tomatoes or tomato sauce and parsley; cook 1 minute.
- Pour in the fava beans with liquid. Add lemon juice and cook 5 minutes.
- Use a potato masher to mash some of the beans, until you have the texture you prefer.
- Garnish with diced tomatoes and lemon slices. Drizzle with olive oil.
- Serve hot with vegetable “scoops” (rounded pieces of bell pepper or onion) or pita bread.
