Palestinian Breakfast

This fava bean recipe makes a healthy and tasty breakfast or snack. Serve it with pita bread or scoop it up with pieces of green pepper or onion.

Serves 2-3.


  • 1 Tbsp olive oil
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 tsp cumin seeds
  • 1 medium tomato, chopped or 1/4 c tomato sauce
  • 1 Tbsp minced parsley (optional)
  • 1 (16 oz) can fine fava beans, plain or seasoned
  • 1/2 Tbsp fresh squeezed lemon juice
  • salt and pepper to taste


  1. In a small, heavy pot over medium heat, warm the olive oil.
  2. Add onions and saute 6 minutes.
  3. Add garlic and cumin seeds and saute another minute.
  4. Add tomatoes or tomato sauce and parsley; cook 1 minute.
  5. Pour in the fava beans with liquid. Add lemon juice and cook 5 minutes.
  6. Use a potato masher to mash some of the beans, until you have the texture you prefer.
  7. Garnish with diced tomatoes and lemon slices. Drizzle with olive oil.
  8. Serve hot with vegetable “scoops” (rounded pieces of bell pepper or onion) or pita bread.
