Here is a perfect breakfast for your Thanksgiving or Christmas visitors. It can be assembled the night before, refrigerated, then baked in the morning. It is a thick porridge with a spicy holiday flavor that is heaven with some lovely cream or milk.
Serves 6-8.
Ingredients:
- 2 eggs
- 1 c milk
- 1/2 c melted coconut oil
- 1/2 c date syrup
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp allspice
- 1/4 tsp nutmeg
- 1/4 tsp mace
- 1/4 tsp salt
- 1/4 c raisins
- 3 cups old fashioned oatmeal
Directions:
- Preheat oven to 350 degrees F. Combine all ingredients, mixing well.
- Pour into greased 11 X 9 inch baking pan.
- Bake at for 30 minutes if room temperature or about 35 minutes if cold from the refrigerator.
- Serve very hot with soy milk, cream or dairy milk. No sugar is needed!
