Holiday Baked Porridge Here is a perfect breakfast for your Thanksgiving or Christmas visitors. It can be assembled the night before, refrigerated, then baked in the morning. It is a thick porridge with a spicy holiday flavor that is heaven with some lovely cream or milk.

Serves 6-8.

Ingredients:

  • 2 eggs
  • 1 c milk
  • 1/2 c melted coconut oil
  • 1/2 c date syrup
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp mace
  • 1/4 tsp salt
  • 1/4 c raisins
  • 3 cups old fashioned oatmeal

Directions:

  1. Preheat oven to 350 degrees F. Combine all ingredients, mixing well.
  2. Pour into greased 11 X 9 inch baking pan.
  3. Bake at for 30 minutes if room temperature or about 35 minutes if cold from the refrigerator.
  4. Serve very hot with soy milk, cream or dairy milk. No sugar is needed!
