We ran out of eggs recently, and tried making French toast without them. They came out so good! They do tend to stick to the pan a bit though, so loosen them up after a minute of so and add butter as needed.
Serves 2.
Ingredients:
- 3/4 c milk
- 2 Tbsp corn starch
- 2 Tbsp brown sugar
- pinch salt
- pinch nutmeg
- 4 thick slices bread
- 2 Tbsp butter
Directions:
- In a shallow pan such as a pie plate, beat the milk, corn starch, brown sugar, salt and nutmeg with a fork until creamy.
- Dip each of the four slices of bread in the batter and set aside.
- Preheat a griddle or skillet over medium heat. Melt some of the butter; fry the French toast a minute before loosening it. After another minute or so, turn it over and brown the other side. Add butter as needed and repeat with all 4 slices.
- Serve hot with maple syrup and vegetarian sausages.
