Avocado Marmite Toast

Our friend, April, brought us a bottle of Marmite yeast extract. It will be fun finding ways to use it in recipes. Here, I find it adds a salty, rich flavor to avocado toast (as well as extra vitamins and minerals).

Serves 2.

  • 2 ripe avocados
  • 1 tsp lime juice
  • 1-2 jalapeno pepper
  • 4 slices whole grain bread
  • 2-3 tsp Marmite yeast extract
  • cilantro leaves

  1. In a medium bowl, mash the avocados with a fork until creamy. Add lime juice and combine well.
  2. Using tongs, place the jalapeno(s) over an open flame or on an electric burner. (This may be done in a broiler as well.) Turn a few times, until charred all the way around. Remove to a cutting board and, once cool enough to handle, de-stem and slice.
  3. Toast the bread to your desired level of crispness. Spread each slice with a half-teaspoon (or more) of the Marmite.
  4. Spread a good amount of avocado over the Marmite. Top with jalapeno slices and cilantro leaves. (Pairs well with tomato slices on the side.)
