Flat Bread with Zaatar

Flat Bread with Za'atar

Za’atar is a spice mix that can be purchased at Middle Eastern stores. I use it in my Pea Soup with Za’atar recipe and here in this savory flat bread.

Makes 12 large pieces.

Ingredients:

  • 1/2 c warm milk
  • 1 Tbsp sugar
  • 1 tsp active dry yeast
  • 1 1/4 c plain non-fat yogurt
  • 5 Tbsp olive oil (divided use)
  • 4 c all purpose unbleached flour
  • 1 1/2 tsp salt
  • 1-2 Tbsp za’atar

Directions:

  1. In a large bowl, blend warm milk, active yeast, and sugar. Allow to stand 15 minutes, or until it blooms.
  2. Add yogurt and 4 tablespoons of the olive oil; blend well.
  3. Using a wooden spoon, blend in the flour and salt. When too thick to stir, use clean hands to form into a dough ball. Turn out on lightly floured surface and knead 5 minutes, adding flour as needed.
  4. Place in an oiled bowl, cover and allow to rise in a warm dark place for 1 1/2 hours or until double.
  5. Punch down and break into 12 even dough balls, placing then on a floured surface. Cover with a clean tea towel and allow to rise 1 1/2 hours.
  6. Preheat a griddle on medium high. Stretch and roll or pat the dough balls to about 10 inches x 6 inches each in size. Grill them one or two at a time, cooking them about 3 minutes per side, or until browned.
  7. Remove to a cooling rack and brush with the remaining tablespoon of olive oil. Sprinkle with za’atar and serve warm or at room temperature.
