These are great used in bean burritos or in our Egg and Olive Spirals. You will be surprised at how easy they are to make!
Makes 8 large tortillas.
Ingredients:
- 1 1/2 c stone ground whole wheat flour
- 2 Tbsp gluten flour
- 1 tsp salt
- 1/2 c grapeseed oil or other good vegetable oil
- 1 c very hot water
Directions:
- In a large bowl, blend together the whole wheat flour, gluten flour, and salt.
- Add oil and hot water and blend well. (Add another tablespoon or two of hot water if needed.)
- Knead for 1-2 minutes.
- Divide dough into 8 even dough bits. Roll each into a ball.
- Heat a dry griddle or heavy skillet on medium high.
- On clean dry surface, roll one of the dough balls into a large (about 10 inch) tortilla. Place it on the hot pan or griddle for a couple of minutes per side. When cooked and beginning to blister, stack it on a platter and repeat with the remaining dough balls.
- Use immediately, or allow to cool. Cover with plastic wrap until served.
