To use the fibers of the jackfruit, try my recipe for Barbecued Jack Fruit Sandwiches or simply freeze the fibers and use them later in veggie burgers and other recipes. To use the seeds, cook in an ungreased pan at 400 degrees F for 20 minutes. Cool, peel and eat as is or use in recipes.
Makes about 2 pints.
- 2 quarts ripe jackfruit bulbs
- Remove white fibers and seeds from the bulbs. Dice in 1/4 inch bits.
- Spread evenly on dehydrator trays, being careful to separate them.
- Dehydrate at 135 degrees F for 8-9 hours. Jackfruit will be chewy and dry. Store in mason jar or other well-sealed container and use as snacks or in salads. They may also be reconstituted and cooked in curries and other hot dishes.
