Soybean Sweet Potato Burgers

Makes 8 large burgers.

Ingredients:

  • 1 1/2 c cooked black or brown soy beans, drained
  • 1 Tbsp crushed garlic
  • 1 Tbsp softened butter
  • 2 Tbsp chili powder
  • 2/3 c onion, finely chopped
  • 2/3 c cooked yams, mashed
  • 2 c cooked rice
  • 2 eggs
  • 1/2 tsp black pepper
  • 1 Tbsp Jugo or nutritional yeast
  • 1 Tbsp vegetarian mushroom bouillon powder
  • 1-2 Tbsp vegetable oil

Directions:

  1. Preheat oven to 350 degrees F and brush a baking sheet with some of the vegetable oil.
  2. In a large bowl, mash the beans with a potato masher or pastry cutter
  3. Add garlic, butter, chili powder, onions, yams, rice, eggs pepper, Jugo, and bouillon powder.
  4. Mix well. Use clean hands to form 8 burgers from the mixture.
  5. Place burgers on prepared baking sheet and brush tops with remaining vegetable oil.
  6. Bake 25 minutes, or until firm and crispy outside. Allow to stand 5 minutes before serving.
