Open-Face Pepper Sandwich

These easy sandwiches will require two large skillets. Ready in a few minutes, they are satisfying and delicious!

Serves 2.

Ingredients:

  • 1 1/2 Tbsp vegetable oil
  • 4 small bell peppers, cored, cut in small pieces
  • 2 Tbsp butter
  • 4 slices whole grain bread
  • 1 c shredded melting cheese
  • 2 small tomatoes, thinly sliced
  • dash salt
  • dash pepper

Directions:

  1. In one large skillet, warm vegetable oil on low.
  2. Add peppers; sprinkle lightly with salt and pepper; cook until lightly browned and tender on all sides.
  3. Remove peppers to holding plate. Carefully wipe skillet with paper towel; set back on unheated burner.
  4. Place another large skillet on another burner.
  5. Butter one side of each of the four slices of bread. Place face down in the two skillets.
  6. Place 1/4 cup of shredded cheese evenly on each bread slice, followed by slices of tomato. Sprinkle with salt and pepper.
  7. Turn both burners on low and cover skillets with lids. Cook several minutes, or until bread is browned on bottom and cheese is melted.
  8. Place two open-faced sandwiches on each of two plates and add peppers to top. Serve immediately.
