Fluffy inside and crisp on the outside,these biscuits were developed by my son. He sometimes serves them with finely diced persimmons on top. They are especially good warm from the oven.
Makes 8 large biscuits.
Ingredients:
- 2 1/2 c all purpose flour
- 1 Tbsp baking powder
- 1 Tbsp sugar
- 1/2 tsp salt
- 1/3 c olive oil
- 3/4 c cold water
- 1 Tbsp lemon juice
Directions:
- Preheat oven to 425 degrees F and grease a large baking sheet.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt
- Add olive oil and cut it in with a fork until well distributed throughout.
- Mix cold water and lemon juice together and add it to the flour mixture. Stir just until combined.
- Drop 8 rounded mounds of dough, evenly spaced, on the prepared pan. Bake in the center of the oven for about 16-18 minutes, or until golden brown on top.
- Serve warm with butter, jam, or finely diced fruit on top.
