This is a light vinaigrette with some interesting flavor tones from the roasted garlic and peanut butter. Salads with this dressing are especially good with a sprinkle of peanuts on top.
Makes about 1 1/4 cups.
Ingredients:
- 1 small head garlic
- 1/2 c olive oil
- 2 Tbsp lime juice
- 2 Tbsp distilled white vinegar
- 2 Tbsp water
- 2 Tbsp peanut butter
- 1 tsp prepared mustard
- 3/4 tsp salt
- 1/8 tsp pepper
Directions:
- Cut the top of the garlic head off. Bundle in tin foil, and roast for 45 minutes at 400 degrees F. Cool enough to handle. Squeeze cloves of garlic into a medium bowl and mash them until smooth.
- Add remaining ingredients to the bowl and beat with a whisk until well-incorporated. Drizzle over salad and serve with a sprinkling of peanuts or sunflower seeds.
