Here is a very light, healthy dessert that is easy to prepare and very delicious to eat. It will satisfy your sweet tooth without unnecessary calories.
Serves 5.
Ingredients:
Apples:
- 5 medium Golden Delicious apples
- 1 c dried figs, chopped
- 2 Tbsp honey
- 1/4 tsp cinnamon
- 1/8 tsp salt
- 2 Tbsp boiling water
- 1 Tbsp lemon juice
Baking Liquid:
- 1/4 c boiling water
- 1 Tbsp lemon juice
Directions:
- Remove the upper third of the apple peel and core each apple without cutting all the way through to the bottom. (A small melon baller works best for this process.)
- Find a baking dish that just fits the apples and will not allow them to fall over. ( I used a 10 inch loaf pan for this.)
- Preheat the oven to 350 degrees F.
- In a medium bowl, mix the figs, honey, cinnamon, salt, the 2 tablespoons boiling water and the 1 tablespoon lemon juice.
- Spoon the fig mixture into the centers of the apples. Use your fingers to gently press the filling down and get as much in as possible.
- Place the apples in the selected baking dish. Place any leftover filling and its liquid around the sides of the apples.
- Combine the “Baking Liquid” ingredients, and pour it in the bottom of the dish.
- Cover tightly with tin foil and bake 50-60 minutes or until very tender.
- Place apples in small serving bowls and spoon the baking liquid and extra figs on top. Serve hot or cold.
