This is a basic recipe that can work with many different vegetables. You can add rosemary, thyme, or any dry herb to the mix. It is an easy way to have a tasty array of vegetables for dinner and it is my favorite way to prepare cauliflower.
Serves 4.
Ingredients:
- 5 medium carrots, peeled and roughly cut
- 1 head cauliflower, broken into florets
- 1 medium yellow onion, sliced
- 1 jalapeño pepper, seeded and minced
- 1/4 c parsley, chopped
- 1 head garlic (whole cloves peeled)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 Tbsp olive oil
Directions:
- Preheat oven to 375 degrees F.
- In a large baking dish or sheet, place the carrots, cauliflower, and onion in a single layer.
- Sprinkle them with jalapeno, parsley, salt, pepper and olive oil.
- Toss until all the vegetables are coated.
- Roast them 20 minutes.
- Flip them over and add garlic. Continue to roast them another 20-30 minutes, or until tender and slightly charred around the edges.
