Oven Roasted Vegetables This is a basic recipe that can work with many different vegetables. You can add rosemary, thyme, or any dry herb to the mix. It is an easy way to have a tasty array of vegetables for dinner and it is my favorite way to prepare cauliflower.

Serves 4.

Ingredients:

  • 5 medium carrots, peeled and roughly cut
  • 1 head cauliflower, broken into florets
  • 1 medium yellow onion, sliced
  • 1 jalapeño pepper, seeded and minced
  • 1/4 c parsley, chopped
  • 1 head garlic (whole cloves peeled)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp olive oil

Directions:

  1. Preheat oven to 375 degrees F.
  2. In a large baking dish or sheet, place the carrots, cauliflower, and onion in a single layer.
  3. Sprinkle them with jalapeno, parsley, salt, pepper and olive oil.
  4. Toss until all the vegetables are coated.
  5. Roast them 20 minutes.
  6. Flip them over and add garlic. Continue to roast them another 20-30 minutes, or until tender and slightly charred around the edges.
