You can combine wild rice with brown rice in any proportion you wish in this recipe. Just be sure you are using raw, unseasoned rice.
Serves 4-5.
Ingredients:
- 1 Tbsp beef style broth and seasoning mix
- 2 c water
- 1 Tbsp olive oil
- 8 oz mushrooms, sliced
- 1/3 c onion, minced
- 1/3 c parsley, minced
- 1 tsp poultry seasoning
- 1/4 tsp salt
- 1/2 c wild and brown rice combination
Directions:
- Preheat the oven to 375 degrees F.
- In a two quart covered casserole dish, stir the beef style broth mix into the water and add the olive oil.
- When dissolved, add the mushrooms, onion, parsley, poultry seasoning, salt and rice.
- Stir well, cover, and baked 40 minutes.
- Remove cover and bake for another 40 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Put in a serving bowl and garnish with sliced green onions or parsley.
