Whether you use a store-bought soy chorizo or make my Homemade Soy Chorizo Crumbles, this is a tasty, high protein way to start your day!
Makes 2 large burritos.
Ingredients:
- 4 tsp butter (divided use)
- 4 green onions
- 1 c soy chorizo
- 2 large flour tortillas
- 4 eggs, lightly beaten
- dash salt and pepper
- 1/2 c shredded cheddar cheese
Directions:
- Heat the tortillas in a dry heavy skillet, or on a cast iron trivet over an open flame until blistered and hot. Keep warm.
- In a medium skillet on medium heat, melt 2 teaspoons of the butter and saute the onions, and soy chorizo about 4 minutes.
- Add the remaining 2 teaspoons of butter and stir until melted. Add the eggs, salt and pepper. Cook as you would an omelet, pulling egg into center, cooking until set, then turning once and cooking briefly on the other side.
- Place warm tortillas on serving plates. Place half of the egg/chorizo “omelet” on each tortilla. Sprinkle with shredded cheese. Wrap the tortillas around the filling and serve with salsa, hot sauce and/or sour cream
