This is one of the tastiest recipes for tofu you will find. Add some stir fried vegetables alongside it, such as broccoli and sugar snap peas, and you will have a nutritious stove-top meal.
Serves 6.
Ingredients:
- 1-16 oz package super firm or extra firm tofu
- 2 Tbsp olive oil
- 1/2 tsp garlic, grated
- 1/4 tsp ginger, grated
- 3/4 tsp crushed red pepper flakes
- 1/4 c apple juice
- 1/4 c sugar
- 1 Tbsp molasses
- 2 Tbsp ketchup
- 1 Tbsp apple cider vinegar
- 1/2 c water
- 1 c red onion, thinly sliced
Directions:
- Rinse and drain tofu. Pat dry and cut into half inch cubes.
- Heat oil in a large skillet on medium high.
- Add tofu and cook for four minutes without turning or moving. Turn and brown the other side.
- When tofu cubes are browned, remove to a holding dish.
- Add garlic, ginger, red pepper, apple juice, sugar, molasses, ketchup, vinegar and water to skillet and heat until any browned bits from the bottom of the skillet are dissolved and everything is well-mixed.
- Add tofu and red onion and bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes on low, stirring often. (The liquid will be absorbed into the tofu. Watch carefully, so that the tofu doesn’t stick.)
- Serve with a sprinkling of sesame seeds and plenty of steamed rice.
