The tangy feta, sweet cranberries, and lemony dressing are in perfect balance to make this cole slaw memorable. Since feta is salty, there is no added salt needed in this salad.
Serves 4-6.
Ingredients:
- 6 c shredded cabbage
- 1/3 c red onion, sliced in paper thin half moons
- 1/3 c shredded carrot
- 1/4 c dried cranberries
- 1/2 c crumbled feta cheese
- 1/3 c mayonnaise
- 1/2 lemon, juiced
- 1 Tbsp honey
- 1/4 tsp coarsely ground black pepper
- 1/2 tsp celery seed
- thinly sliced lemon and extra celery seed for garnish
Directions:
- In a large bowl, mix the cabbage, onion, carrot, cranberries and feta.
- In a small bowl, make the dressing by blending the mayonnaise, lemon juice, honey, pepper and celery seed.
- Pour this dressing over the slaw and mix well.
- Serve with lemon slices and extra celery seed for garnish.
