By popular demand, I am including my Best Brownie recipe. It’s not exactly a health-food recipe, but it is good for the soul. At least that’s what I tell myself!
Makes 8-9 brownies.
Ingredients:
- 1/2 c butter or margarine, softened
- 3/4 c sugar
- 1 tsp vanilla
- 2 eggs
- 1/2 c all-purpose flour (or rice flour or whole wheat pastry flour)
- 1/2 c cocoa powder, unsweetened
- 1/4 tsp baking powder
- 1/4 tsp salt (omit if using salted butter or margarine)
- 1/2 c nuts, chopped (optional)
Directions:
- Preheat oven to 350 degrees F.
- Grease a 9 inch baking pan.
- In a medium bowl, cream butter, sugar and vanilla.
- Add eggs and beat well with spoon.
- Sift together flour, cocoa, baking powder and salt. Gradually add to egg mixture, beating just until well blended.
- Fold in nuts, if desired.
- Spread evenly in pan.
- Bake about 25 minutes, or until brownies pull away from pan and a toothpick tester comes out clean.
