Best Brownies

Best Brownies By popular demand, I am including my Best Brownie recipe. It’s not exactly a health-food recipe, but it is good for the soul. At least that’s what I tell myself!

Makes 8-9 brownies.

Ingredients:

  • 1/2 c butter or margarine, softened
  • 3/4 c sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 c all-purpose flour (or rice flour or whole wheat pastry flour)
  • 1/2 c cocoa powder, unsweetened
  • 1/4 tsp baking powder
  • 1/4 tsp salt (omit if using salted butter or margarine)
  • 1/2 c nuts, chopped (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease a 9 inch baking pan.
  3. In a medium bowl, cream butter, sugar and vanilla.
  4. Add eggs and beat well with spoon.
  5. Sift together flour, cocoa, baking powder and salt. Gradually add to egg mixture, beating just until well blended.
  6. Fold in nuts, if desired.
  7. Spread evenly in pan.
  8. Bake about 25 minutes, or until brownies pull away from pan and a toothpick tester comes out clean.
