Baked Wild and Brown Rice

You can combine wild rice with brown rice in any proportion you wish in this recipe. Just be sure you are using raw, unseasoned rice. Baked Wild and Brown Rice

Serves 4-5.

Ingredients:

  • 1 Tbsp beef style broth and seasoning mix
  • 2 c water
  • 1 Tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1/3 c onion, minced
  • 1/3 c parsley, minced
  • 1 tsp poultry seasoning
  • 1/4 tsp salt
  • 1/2 c wild and brown rice combination

Directions:

  1. Preheat the oven to 375 degrees F.
  2. In a two quart covered casserole dish, stir the beef style broth mix into the water and add the olive oil.
  3. When dissolved, add the mushrooms, onion, parsley, poultry seasoning, salt and rice.
  4. Stir well, cover, and baked 40 minutes.
  5. Remove cover and bake for another 40 minutes, or until the rice is tender and most of the liquid has been absorbed.
  6. Put in a serving bowl and garnish with sliced green onions or parsley.
