Soy Curl Zucchini Stew : Crock Pot This slow cooker meal is super easy to make with Butler Soy Curls or similar textured vegetable protein chunks. Throw everything in the pot, turn it to high, and four hours later, you will have a delicious stew!

Makes 2 quarts.

Ingredients:

  • 1 medium zucchini
  • 2 medium potatoes
  • 2 medium carrots
  • 1 c purple cabbage, chopped
  • 2 c Butler soy curls
  • 2 c tomato sauce
  • 1 Tbsp capers
  • 1 Tbsp olive oil
  • 1/4 tsp salt, or to taste
  • 1 1/2 tsp mustard seeds
  • 3 c water

Directions:

  1. Peel the zucchini, potatoes, and carrots. Chop the zucchini and potatoes into bite-sized pieces. Cut the carrots in 1/4 inch slices. Place all in a 10 cup or larger crock pot.
  2. Add cabbage, soy curls, tomato sauce, capers, olive oil, salt and mustard seeds. Pour in enough of the water to barely cover everything. Stir well.
  3. Cook on high for 4 hours. Serve hot.
