Scalloped Potatoes with Soy Bacon Bits : TVP “Bacos”, or soy bacon bits, can be found in the bin of your favorite health store at a reasonable price. They are a flavored form of textured vegetable protein (TVP). In our potato recipe, they add crunch and flavor in a big way!

Serves 4-5.

Ingredients:

Potatoes:

  • 1/4 c soy bacon bits
  • 1 c low fat milk
  • 1 Tbsp potato flour or all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 3-4 medium potatoes, peeled and thinly sliced (about 3 cups)
  • 2 Tbsp butter or margarine
  • 1/4 c onion, minced
  • 1/4 c celery, minced
  • 1/4 c carrots, minced
  • 1 tsp rubbed sage

Topping:

  • 3 Tbsp cracker meal
  • 1 Tbsp melted butter or margarine
  • Dash salt and pepper

Directions:

  1. Preheat the oven to 375 degrees F. Oil an 11 x 7 x 2 inch baking dish. In a bag, mix the potato flour, salt, and pepper together and add the potatoes. Shake until the potatoes are well-dusted. Set aside. In a bowl, add the soy bacon bits to the milk and allow to stand 10 minutes or more.
  2. In a medium skillet over medium low heat, sauté the onion, celery, and carrots for 2-3 minutes. Add the sage and sauté another 30 seconds. Remove from stove and set aside.
  3. Place half of the dusted potatoes in the prepared pan in an even layer. Sprinkle half of the sautéed vegetables evenly over the potatoes. Repeat the two layers once. Pour the milk mixture on top, leaving the soy bits evenly dispersed on top. Lastly, mix the topping ingredients together and sprinkle over the dish. Bake uncovered 35 minutes. Serve hot.
