Carob Coconut Treats

Carob is a vitamin-rich legume, and it tastes divine. These crunchy, chewy cereal treats will be a favorite of the kids in your family!Carob Coconut Treats

Makes about 1 dozen treats.

Ingredients:

  • 1/2 c corn syrup
  • 1/2 c brown sugar
  • 1/4 c margarine or butter
  • 1/4 c carob powder
  • 1/2 tsp vanilla extract
  • 1/2 c unsweetened dessicated coconut
  • 5 c cornflakes cereal

Directions:

  1. Butter an 8 x 8 inch pan or similar dish. Set aside.
  2. In a large pot over medium heat, cook the corn syrup and brown sugar until boiling.
  3. Add margarine, carob, and vanilla and bring back to a boil, stirring constantly.
  4. Remove from burner, and add most of the coconut (reserving 2 Tbsp for the topping) and all of the cornflakes. Stir well. Pour into prepared pan and press down with spoon until compressed and smooth. Immediately sprinkle with reserved coconut and press down to adhere. Allow to cool 20 minutes before slicing and setting on a platter. Cool completely before serving.
