Vegetarian Toad in the HoleThis is a lovely British dish that can be served for breakfast or a light dinner. For the “toads”, we used Cedar Lake Breakfast Sausages, but you can use any sausage you like, even veggie hotdogs. The batter makes a savory pudding that is “eggy”, light, and delicious. Try our Savory Sauce to top it off.

Serves 4.

Ingredients:

  • 2 Tbsp olive oil
  • 1/2 medium onion, thinly sliced
  • 6-8 veggie sausages
  • 1 c all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp dry parsley
  • 1/4 tsp sea salt
  • 1/8 tsp pepper
  • 1 1/2 c milk
  • 2 eggs

Directions:

  1. Preheat the oven to 350 degrees F. Place the oil in the bottom of a 9 x 9 x 2 inch baking dish. Line the sausages down the center and place sliced onions on edges.
  2. Bake 10 minutes while preparing the batter. For batter, mix together the flour, baking powder, parsley, salt and pepper in a medium bowl. Make a well in the center of the flour mixture and add the milk and eggs. Whisk all together until just smooth.
  3. Carefully remove the hot sausages and onions from the oven and pour over the batter on top. Return pan to oven and bake 40 minutes or until puffed and set up. Allow to stand 10 minutes before cutting. Serve with vegetarian gravy or sauce.
