This easy roasted dish is especially nice served on a bed or kale or other greens.
Roti is an Indian flatbread that is similar to pita. It is easy to make on a griddle or heavy skillet, and bakes up quickly. This recipe goes very well with my Ginger Mint Hummus
I like to use Betta Foods textured vegetable protein in my cooking, as the texture and flavor is excellent. If you cannot find this product, use your favorite soya protein, or substitute mushrooms for the TVP. I leave the outer skin on the fava beans for this recipe. It is mildly chewy but adds to the flavor of the stew.
Use beef flavored textured soy protein chunks to make this vitamin rich baked dish.
