This is a quick and easy soup that makes a complete lunch when served with rolls, tortillas or corn bread. If you want more heat, add a dash of your favorite hot sauce.
I use a stove-top Presto 4-quart pressure cooker. (You will need at least a 4-quart pressure cooker for this recipe, and your cooker may require different settings from mine.) I find this method to produce refried beans that are just as tasty as the slow cooked variety.
Use beef flavored textured soy protein chunks to make this vitamin rich baked dish.
Makes 2 (8") pepperoni logs.
