Sweet lemons or "citrus limetta" are a delightful lemon that may be eaten raw just like an orange. Here I have used 2 sweet lemons in making a delicious salad dressing.
I used a basic brioche dough for the pastry. I used 4 sweet lemons (Meyers) and 2 standard tart lemons in making the lemon curd filling. Because of the sweet lemons, I used only 1/2 cup of sugar.
