Unlike regular cakes, snack cakes may be picked up and eaten without the use of utensils. They hold together nicely and don't create a mess of crumbs. This recipe pumps up the protein in the snack with wheat germ and nuts.
This waldorf salad has an exotic flare with the starring role of the persimmon. Choose firm persimmons that are just ripe and still have "bite" to them.

Joffof is a West African classic dish that combines spicy rice with fried bananas or plantains. It is often served with chicken, and in this vegetarian version, I use Worthington FriChik for an authentic flavor.

When I have leftover ripe bananas, this is how I like to use them. Mildly sweet, these biscuits still have the nice crumbly texture I love, and are fantastic with a spread of fresh butter.
